As I was making up my goodie trays for Christmas this year, I decided I wanted to add peppermint bark. Last year, I made Salted Caramel Pretzel bark and although it was amazing, I wanted to change it up. Not only was this SOOOOO simple to make, it turned out quite festive and was the perfect addition to my trays. I brought some to a friends house and it was a huge hit!! Nothing says Christmas like some yummy peppermint bark!
1 bag (11 oz) white chocolate chips
1 tsp peppermint extract
Candy Canes, crushed
In a microwave safe bowl, add in the white chocolate chips. In increments of 30 seconds, heat chocolate until smooth and creamy. *You may also melt chocolate over stove, low heat, stirring frequently.
Once melted, add in the peppermint extract. Mix thoroughly. Pour melted chocolate onto a foil lined cookie sheet in desired thickness. Sprinkle the crushed candy cane on top of chocolate. Allow to set up on counter or in fridge. Once set, break into pieces and store in air tight container/bag.
