Gingerbread Pancakes

With Christmas coming up, my hubby and I wanted to try a new pancake recipe that was a bit more “Holiday” themed. We LOVE pancakes in our house and have tried cinnamon roll, pumpkin, snickerdoodle, and more. These were a hit, especially with the kids and tasted like a gingerbread cookie, only in the form of a pancake, haha! These would be perfect on Christmas morning with a cup of hot cocoa! 


2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
2 tsp ground ginger
1 tsp nutmeg
1/4 tsp cloves
1 cup buttermilk (to substitute; add 1 tbsp white vinegar to a measuring bowl and add enough milk to fill to 1 cup, allow to sit for 5 minutes)
1/2 cup coffee, cooled
4 tbsp butter, melted
2 eggs
1/4 cup brown sugar


In a large bowl, add all ingredients together and stir until just combined. It is okay to have a few lumps in batter, be sure not to over mix. Heat a skillet or griddle and melt some butter on surface or use cooking spray to slightly grease surface. Using a 1/3 measuring cup, pour batter onto surface. Cook for a few minutes, or until bubbles appear, and carefully flip to the other side. Once both sides are cooked, remove and serve with butter, syrup, whip cream, or topping of your choice.
