Creamy Tomato and Sausage Pasta

A few weeks ago, my mom emailed me this picture of the dinner she made, along with her recipe. Isn’t that a great mom? She knows I am always trying new things in the kitchen, and she too loves cooking……so when she tries new things, she sends them my way to blog!! When I saw the pic, I knew it would be a hit. Not only does it look amazing, but it is quite simple, and paired with a glass of wine (for the adults of course), it would make the perfect dinner!!!


2 tablespoons olive oil
3 garlic cloves, chopped
1 lb. Italian sausages, casings removed
1 c. heavy whipping cream
2 14.5-ounce cans diced Italian-seasoned tomatoes, undrained
1 tsp. dried ground sage
1 tsp. dried basil
1 teaspoon dried red pepper flakes (may adjust more or less, to taste)
½ tsp. each, salt and pepper
3/4 lb. pasta (fettuccine, spaghetti, angel hair, etc)Parmesan cheese, grated


Heat olive oil in large skillet over medium-high heat. Add garlic and Italian sausages; sauté while breaking up the sausage until cooked through. Add cream and simmer for a few minutes, then add tomatoes and spices. Simmer while stirring occasionally, to allow flavors to meld, for approx. 15 minutes.

Meanwhile, cook pasta in large pot of boiling salted water until al dente. Drain pasta, reserving 1/2 c. pasta water.  Toss pasta with the creamy tomato and sausage sauce, adding reserved pasta water a little at a time, if mixture is too thick. Transfer to pasta serving bowl and sprinkle with grated parmesan!  Bon Appetite!
