Last night, as I was going through my pantry trying to figure out what I was making for dinner, I realized I had about 4 bags of tortilla shells. I have no idea what I was thinking when I bought all of those, maybe they were on sale, haha! I decided to throw some things together and make these taquitos. The entire family went crazy over them, and we had enough leftover to freeze about 8 for future lunches/dinner. My hubby was in charge of cooking these, I was the assembler! Ended up being the perfect team!!
3-4 cups cooked, shredded chicken
6 oz cream cheese, softened
1/3 cup sour cream
1/2 cup salsa
1 1/2 cups Mexican Blend cheese, shredded
1/2 cup green onion, sliced
1 tbsp taco seasoning
Flour tortillas (I used about 15)
Oil for frying
Sour Cream/Salsa/Guacamole (for serving)
In a large bowl, combine the chicken, cream cheese, sour cream, salsa, cheese, green onion, and taco seasoning. Once combined, place about 3-4 tbsp in each tortilla and roll up. Using a large skillet, pour enough oil to generously coat the bottom. Allow to heat through on medium heat. Place tortillas in oil and cook each side until browned. Remove and place on a plate with paper towels or towels to absorb the excess oil. Once all have been cooked, serve with sour cream, salsa, or guacamole.
