Pumpkin Cream Cheese Muffins

A few days ago, I mentioned I went to a Halloween themed playdate. The kids got to enjoy yummy Halloween themed snacks and lunch, and my friend made these yummy muffins for the moms. The flavor was quite delicious and since I am a huge fan of cream cheese, I loved these!! The original recipe said to make this into a bread, so whether you want to make loaves of these, or muffins, totally up to you!!


2 cups canned Pumpkin
3 eggs
1 egg white
1 1/2 cups flour
1/2 cup sugar
3/4 cup brown sugar
1 tsp baking soda
2 tsp pumpkin pie spice

Cream Cheese Filling:


8 oz cream cheese, softened
4 tbsp sugar
1 egg
2 tsp flour
1 tsp vanilla


Preheat oven to 350. Grease or line a muffin tray or grease a loaf pan (mini loaf pans work too). In a bowl, combine pumpkin, eggs, and egg white. Mix until smooth. In a separate bowl, mix together the flour, sugar, brown sugar, baking soda, and pumpkin pie spice. Slowly add the dry ingredients to the wet mixture and stir until just smooth. Set aside.
In another bowl, combine all the cream cheese filling ingredients and mix until combined.
To assemble, spoon half the pumpkin mix into the bottom of the loaf pans. Spread cream cheese filling on top of pumpkin mix, and pour remaining pumpkin on top. At this point, you should have pumpkin layer, cream cheese layer, and one more pumpkin layer. If making muffins, spoon pumpkin into muffin cups about 1/3 full. Follow the cream cheese layer on top, and end with another pumpkin layer.
Bake in the oven about 20-25 minutes if using muffins or mini loaf pans. If making one big loaf, adjust time accordingly. Enjoy!!
