Orzo w/ Tomatoes, Zucchini, and Feta

A few weeks ago, I made this yummy dish to go with our Lemon Baked Cod. This dish was so light tasting, and was the perfect side to go with the fish. My kids loved it and especially loved the veggies in it. Whether this be a side dish, or meatless meal for your family, it is sure to be a hit!!


12 oz uncooked whole wheat orzo
2 tbsp olive oil
2 tomatoes, chopped
1 zucchini, chopped
3/4 cup crumbled Feta cheese
1/2 tsp salt
1/2 tsp pepper
2 tsp lemon juice


Prepare orzo according to directions on package. Drain and keep warm. Heat the olive oil in a large skillet. Add in tomatoes and zucchini. Saute for about 5 minutes, or until tender. Remove from heat. Stir in the cooked orzo, salt, pepper, and lemon juice. Add in the crumbled Feta and serve!!
