Creamy Spinach and Tomato Tortellini

Last week, when my dad was out of town, we had my mom over for dinner. I decided to make this dinner since tortellini is a favorite with my kids! Everyone loved it!! My mom even brought over the fixings for Caprese Salad, so it was a yummy meal all around!! I had it on the table in no time, and had tons of leftovers for lunches the next day!!


1 (16 oz) package frozen tortellini
1 onion, chopped
2 tbsp olive oil
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes, undrained
1/2 package (5 oz) frozen chopped spinach, thawed and drained
1 1/2 tsp dried basil
1 tsp pepper
1 1/2 cups heavy whipping cream
1/2 cup grated Parmesan cheese


In a skillet, saute onion in oil until it is tender. Add in garlic and allow to cook an additional one minute. Add the tomatoes, spinach, Basil, and pepper. Cook over medium heat, stirring every few minutes until all liquid is absorbed (about 4 minutes). Stir in cream and cheese. Bring to a boil. Reduce heat and allow to simmer about 8 minutes, uncovered.
In a pot, cook tortellini as directed on package. Drain tortellini and add to the spinach sauce. Stir until well coated. Serve!

    Very tasty! However my sauce was very thin. I did not drain my frozen spinach. I will try that next time.
