Chipotle Salmon Tacos

Ever since my hubby and I have moved to Seattle, we love trying out new seafood dishes. A few weeks ago, we wanted to try to replicate salmon tacos that we had ordered in a restaurant. The tacos we ordered were spicy, but not too much heat, and the flavor was amazing. We bought some ingredients, tried it out, and sure enough, we got pretty darn close to the original! We had them two nights in a row since there were leftovers, and my hubby was requesting them again as soon as we ate the last of it, haha!!

1 tbsp Adobo puree
Zest of 1 lime
1 tbsp lime juice
2 tsp fresh cilantro, chopped
1 tsp molasses
1 tsp salt
1/2 tsp pepper
1/4 tsp paprika
1/4 tsp cayenne pepper (adjust more or less to liking)
3 tbsp olive oil
2 lbs salmon filets
In a flat pan or bag, mix together the Adobo, lime zest, lime juice, cilantro, molasses, salt, pepper, paprika, cayenne pepper, and olive oil. Place salmon in pan or bag and coat thoroughly in seasoning sauce. Allow to marinade for at least 30 minutes. Once marinated, bake the salmon in the oven at 375 for 10-20 minutes, depending on the size of salmon. You may also grill the salmon if desired. 
Once cooked, flake apart using a fork. Serve salmon in a tortilla with fresh guacamole, cilantro, cheese, slaw, etc.
