A while back, my grocery store was running a special on there whole chickens. I was able to pick up a 6lb chicken for $3. It was amazed! Needless to say, I stocked up big time. I ended up grabbing about 5 of them, and the only reason I didnt grab 100 was because they had a limit hehe. Whole chickens are a favorite of mine, especially when cooked in my slow cooker. It provides an entire dinner, and the leftovers are great to use for another meal. It is hardly any work and it stays moist! Yum!
5-6 cloves of garlic
1 whole chicken, about 5-6 lbs
Fresh herbs (I used thyme)
Cut 2 lemons in half and place on bottom of slow cooker. Place about 3 cloves of garlic with the lemon. Place whole chicken on top of garlic and lemon. Make sure the chicken is cleaned and paper liner is removed, etc. Sprinkle seasonings, salt, and pepper on top of chicken. Slice remaining lemon and place on top of chicken along with the remaining garlic and fresh herbs. Place lid on slow cooker and allow to cook on low 6-7 hours, or high about 4 hours. Once cooked, remove chicken and serve. You can make a gravy to serve with it, or scoop some of the lemon juice and pour that on top for added flavor.
I served this with our Garlic and Parmesan Roasted Zucchini and Garlic Mashed Potatoes.
