When my husband travels I try not to cook as much and get a little break. However by the time he gets home I’m craving home cooked meals. I just get tired of eating sandwiches and Chick- fil-a . Ok I really don’t get tired of chick-fil-a but I really do want home cooked meals. So I usually go all out on his first night home. You know to show him what he’s been missing out on , as I hide the pizza boxes ha ha. He had asked for something healthy so I made salmon. For some reason my mind always goes to fish when I think healthy. Even drenched in a butter sauce I’m like wow I’m so healthy for picking fish ha ha. Well he loved this salmon recipe and I hope you do to.
1 large size fillet of salmon (mine was 14.6 )
1 leek washed and thinly sliced
1/2 cup of parlsey, chopped
3 Tablespoons of olive oil
1 lemon and zest
1 /4 teaspoon of garlic Salt
Pepper to taste
Preheat the oven to 400 degrees. Place the salmon in a bake pan lined with tinfoil. Lightly season with garlic salt and pepper. Sprinkle the parsley over the salmon. Top with leeks. Drizzle with olive oil. And squeeze the lemon juice on top. Bake in the oven for about 20 minutes or until cooked thoroughly . I served it with scalloped potatoes and sautéed spinach .
