Chicken and Vegetable Couscous

Lately, I have been in the mood to try new things. Being a mom of three little ones, it limits me with the time I have to prep and make dinner though. I decided to try couscous since I had never had it before. I call this dinner “semi-homemade” since majority of it is from a box. This dinner was full of flavor, veggies, and quite simple to make. From start to finish, it was on the table in about 20 minutes!! Perfect dinner for those upcoming school nights!! My kids ate it up, and never even mentioned the veggies in it!! I call this a winner!!


1 tbsp butter
1 lb boneless chicken breasts, diced
Garlic Powder/Salt/Pepper
16 oz frozen mixed vegetables (any desired variety)
1 1/4 cup water
1 package couscous mix (any flavor works, I used olive oil and roasted garlic flavor)


In a large skillet, melt the butter over medium-high heat. Add in the chicken and cook until no longer pink. Sprinkle chicken with desired amount of garlic, salt, and pepper. Add in the frozen mixed veggies, seasoning packet from couscous and water. Bring to a boil and stir in couscous. Remove from heat and allow to sit for 5 minutes. Fluff with a fork and serve!!!
