Banana Chocolate Cupcakes

Confession time! For some reason, as I was making these, I had it in my head that these would turn out like muffins. I did not make frosting, I told my kids I was making a yummy muffin for them to have as a mid-morning snack, and I was already planning on making a new dessert to try later that day. When I pulled these out of the oven, I was shocked to see they resembled a cupcake more than a muffin haha. I do not know why I was thinking muffin, but when I saw how they looked and tasted, I decided to grab the container of frosting I had in my pantry and spread some on top. You can make your own frosting from scratch if you desire, or take my easy approach and use store bought, either way you will love these. My hubby LOVED them and said they were quite moist and flavorful. It was a win win in my opinion because I did not have to attempt a new dessert, since my muffins turned into cupcakes, LOL!!! : )

3/4 cup sugar
1 cup whole wheat pastry flour (all purpose works too)
1/2 cup cocoa powder
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 egg
1 medium banana, mashed
1/2 cup warm water
1/4 cup milk
1/4 cup vegetable or canola oil
3/4 tsp vanilla extract
Frosting of choice
In a medium bowl, combine sugar, flour, cocoa powder, baking soda, baking powder, and salt. In a different bowl, combine egg, banana, water, milk, and vanilla. Add wet ingredients to dry ingredients and mix well. Pour batter into muffin tin (greased or lined with cups) about 3/4 full. Bake in a preheated oven, 350, for about 20 minutes. Cool completely and frost!
