Lately I have been on a dairy free diet due to my baby girl having a dairy sensitivity. This has been so hard on me, due to me adding butter and cheese to anything and everything. Now I have to flavor my food in other ways and I’ve come to find that I LOVE garlic! I tried roasting carrots with garlic and ginger and they were so good. There was definitely a party in my tummy.
8 whole carrots, cleaned and cut into about 2 inch pieces
1 tablespoon of olive oil
6 garlic cloves, chopped
1 teaspoon of ginger grated
Preheat the oven to 375 degrees.Chop the carrots into 1″ pieces, Place on a roasting pan. Drizzle with olive oil . Add garlic and Ginger. Mix ingredients together . Do not cover.
Roast in the oven for about 45 minutes or until carrots are tender. Remove from the oven. Enjoy!
