One of my most favorite things to make and eat is rice. There’s certain meals that just don’t taste the same if I don’t have rice to go with it. I love it so much, I can even eat a whole bowl of it by itself. However I know it can get old fast for my family, so I have to mix up the ways I prepare it. One of my favorites is this Cilantro Lime recipe. It goes great with anything. This week I made it along with some beef enchiladas. However, whatever you choose to pair it with I’m sure it will be a big hit.
1 tablespoon of vegetable oil
2 cups of long grain rice
4 cups of water
1 chicken bouillon cube
1/2 a cup of cilantro
1 tablespoon of fresh lime juice
Heat the oil in a medium size pan over medium heat. Add rice. Stir fry for about a minute but add water before it turns brown. Now add the chicken bouillon , cilantro, and lime juice. Bring to a boil. Reduce heat and cover . Let it simmer for about 15-20 minutes until rice is cooked. Fluff with fork and enjoy!
