Cheesy Garlic Tomatoes

A few nights ago, my hubby and I made tuna melts for dinner. We wanted something to add to the dinner, but nothing too heavy, since we weren’t that hungry. I had two tomatoes in my produce bin and we decided to make these. They turned out amazing, and believe it or not, I am not a huge tomato fan. These may just be new favorite of mine as far as side dishes go!!


2 tomatoes, cut into 6-8 slices
1/4 cup grated Parmesan cheese
1/4 cup seasoned bread crumbs
4 cloves garlic, minced
Olive Oil
Parsley (optional)


Lay cut tomatoes on a foil lined baking sheet. Preheat oven to 425. Sprinkle minced garlic on top of tomatoes. Next, sprinkle cheese and bread crumbs on top. Season lightly with salt and pepper. Drizzle a small amount of olive oil on each of the tomato slices. If using parsley, add it on top. Place in oven and bake for about 10 minutes.
