Quinoa is a new favorite in our house, ever since my hubby grabbed a big bag of it at Costco a few weeks ago. We had never tried it before then, but now we cant get enough of it. My hubby is not a fan of rice, so I make this in its place. This casserole works with rice too, if you prefer it over Quinoa. You can also change it up by adding some chicken in, etc. Totally up to you, its quite yummy and simple to make!
4 tbsp butter
5 garlic cloves, minced
1/4 cup flour
2 cups milk
1 tsp mustard
1 tsp salt/ a few shakes of Pepper
2 1/2 cups Cheddar cheese, shredded
2/3 cup Parmesan cheese, shredded
3-4 cups cooked Quinoa (or rice)
3 cups broccoli florets, cooked
Grease a 9×13 baking dish. Preheat oven to 400. In a large saucepan, melt butter and add in garlic. Allow to cook for about 1-2 minutes. Whisk in flour and cook an additional 2-3 minutes. Slowly whisk in milk, mustard, salt, and pepper. Simmer about 4 minutes, until mixture begins to thicken up. Add in 2 cups of cheddar cheese and Parmesan cheese. Stir until cheese is melted and mixture is smooth. Add in cooked Quinoa and cooked broccoli. Pour mixture into baking pan. Top with remaining 1/2 cup cheddar cheese. Place dish in oven and bake 30 minutes.
