Banana Crumb Muffins

My husband and I took the family to my aunts house in Oregon yesterday for the Fourth of July. We ended up driving back late last night, so the kids could sleep in their own beds. We did not get home until around 1 am, so needless to say, we were all exhausted. When we woke up this morning, we all wanted a yummy breakfast, but I did not have that much energy to whip up something. I ended up settling on making these muffins since they were simple, and they were such a yummy start to our day. It tastes like banana bread mixed with a yummy streusel topping. If you love muffins, I definitely recommend trying these! Hope you all had a relaxing Fourth of July!


1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 bananas, mashed
1/2 cup sugar
1 egg
1/3 cup butter, melted


1/3 cup brown sugar
2 tbsp flour
1/2 tsp ground cinnamon
1 tbsp butter


Preheat oven to 375. Line muffin tin with liners or grease. In a bowl, mix together flour, baking powder, baking soda, and salt. In a separate bowl, add mashed bananas, sugar, egg, and melted butter. Add wet ingredients to dry ingredients, stirring until combined. Be sure not to over-mix. Pour batter into muffin cups, about 3/4 full. In small bowl, combine topping ingredients. Sprinkle mixture on top of batter. Place muffins in oven and bake 20-21 minutes.
