Apple Fritter Muffins

Yesterday, the family and I all woke up and decided to make something new for breakfast. Since muffins are quite kid friendly, we love to make those! We had a few apples to use up, so chose to make an apple based muffin. These apple fritter muffins had a warm glaze over them that reminded me of the glaze Krispy Kreme uses. The kids loved them and we all had happy tummies! We even were able to enjoy the leftovers for breakfast this morning! Yea! The ingredients may look like a lot, but they are definitely worth it!!

Ingredients:

Apple Mixture:
2 large Granny Smith apples, diced
3 tbsp butter
1/4 cup sugar
3 tsp cinnamon
2 tbsp water
1/3 cup flour

Muffin:
2 large eggs
1/4 cup unsweetened applesauce
1/4 cup oil
3/4 cup sugar
1/4 cup brown sugar
1 tsp vanilla extract
2 1/3 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3 tsp cinnamon
1/2 tsp salt
1 cup buttermilk (or 1 tbsp vinegar in 1 cup milk)

Glaze:
2 tbsp melted butter
1 cup powdered sugar
1 tsp vanilla extract
1 tbsp hot water

Directions:

Preheat oven to 400. Line muffin tin with cup liners or grease. In a skillet, add apple ingredients, excluding flour. Allow to cook for about 10 minutes over medium-high heat. Stir in flour to coat apples.
In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix together applesauce, oil, and sugars until smooth. Beat in eggs one at a time. Add vanilla and stir to mix. Stir in flour mixture to liquid mixture, stir until just combined. Gently fold in apples. Spoon batter into muffin cups, about 2/3 full. Bake in oven 17 minutes, or until golden brown. Remove from oven and allow to cool about 5 minutes before removing from pan. Cool an additional 10 minutes before glazing.
To make glaze, mix together the butter, sugar, vanilla, and water until smooth. Dip the top of the muffin in glaze! Enjoy!!

    I TAKE A PICTURE OFTHE RECIPES I WANT FROM HERE WITH MY IPAD, THEN LATER WHEN I FEEL LIKE WRITING I JUST GO INTO PHOTOS AND BRING UP THE RECIPES AND WRITE THEM DOWN, THEN DLETE FROM PHOTO ALBUM. I LOVE BEING ABLE TO DO THIS. HAVE GOTTEN SO MANY GREAT RECIPES FROM YOUR SITE. EVERYBODY RAVED ABOUT THE PECAN PIE MUFFINS. THEY DISAPPEARED SO FAST I COULDN’T BELIEVE IT. EVEN MY HUSBAND WHO DOESN’T LIKE THINGS WITH NUTS INSIDE ATE AT LEAST SIX OF THEM. THANKS SO MUCH !!!!!!!
