Fruit Roll Ups

Now that my kids are home from school for the summer, I have been trying to come up with fun, new snacks for them to eat throughout the day. My kids love fruit rolls up, so I thought it would be a great idea to try to make them. These were SO easy to make, it just took a long time to dehydrate in the oven. If you make them in the morning, the kids will have a yummy afternoon snack!!

10 oz strawberries, stems removed
1 1/2 tbsp lime juice
2 tbsp sugar

Place strawberries into a food processor. Blend/Pulse them until completely smooth. Pour strawberries into saucepan over medium heat. Add in sugar and lime juice. Stir frequently for about 10 minutes, or until thickened and “jam-like”. Preheat oven to 170. Spread jam mixture onto a baking pan lined with parchment paper. Bake in oven for about 3 hours, or until the mixture no longer feels sticky. Be careful not to overcook it as it will get crispy. Remove from oven and allow to cool completely. Cut with a pizza cutter and enjoy!!
