Spicy Fish Taco Bowl

Last night, my hubby and I had these yummy fish taco bowls. I decided to make something different for my kids since they are not huge fans of half the things we put in it. My hubby and I however, LOVED these. It was so filling and easy to make. Full of flavor, and we had it on the table start to finish in less than 20 minutes. I definitely recommend trying this!!!


1 tbsp chili powder
1 tbsp cumin
1/2 tsp Cayenne Pepper
1/2 tsp salt/pepper
Cod Fillets (you can use tilapia if desired)
Olive Oil
2 cloves minced garlic
1 red pepper, diced
1 red onion, diced
1 can (15 oz) black beans, rinsed
2 cups cooked brown rice
Optional toppings: avocado, salsa, sour cream, cheese


In a small bowl, mix together spices and rub onto both sides of fish fillets. Set aside. In a skillet, over medium high heat, drizzle some olive oil and heat. Add in garlic and allow to saute for 1-2 minutes. Add in fish, cooking several minutes on each side, until cooked through. Remove from skillet. Add red pepper and onion into skillet and allow to cook until tender. Add black beans and heat through. To assemble bowl, place cooked rice on bottom, followed by bean mixture, flaked fish, and toppings.
