Tuscan Pasta w/ Tomato Basil Cream Sauce

Lately, I have been experimenting with one meatless meal a week. I have always had the mentality to include a meat with every dinner, so this is a change for me and quite fun. A few days ago, I had gone to a friends house for a play-date with the kids and when I finally glanced at the clock, I realized it was already dinner time and I still wasn’t home, he-he  I loaded the kids up in the car and headed home. I was trying to think of something to put together quickly since I wasn’t sure how long I would be able to hold off the kiddos too long. From the time I started this dinner to the time we ate it, was no more than about 15 minutes, so I consider that a success. It was quite tasty and we all thoroughly enjoyed it! Gotta love quick meals after a fun afternoon with friends!!

Ingredients:

1 (20 oz) package ravioli (I used four cheese, any variety works)
1 (16 oz) jar Sun Dried Tomato Alfredo sauce
2 tbsp white wine
1 can diced tomatoes (14.5 oz), full drained
1/2 cup chopped Basil
1/2 cup Parmesan cheese, grated

Directions:

Prepare pasta according to directions. Meanwhile, pour alfredo and wine into medium saucepan. Stir in tomatoes and cook over medium heat. Add in basil. Allow to simmer for about 5 minutes. Toss the sauce with the pasta and sprinkle cheese on top. Serve warm!
*You can use tortellini if you prefer, : )
