My hubby is a huge fan of lasagna. Up until a few months ago, I had never made one. Its one of those meals that he now requests quite frequently. To change things up, I decided to throw it into a slow cooker. It turned out just as yummy. If you are short on time, throw it all in a slow cooker. If you prefer it made in the oven, try this yummy version. Delicious!!!
1 lb ground beef or ground turkey
1 jar (24 oz) spaghetti sauce (I use garlic and onion flavored)
1 cup water
1 container (15 oz) Ricotta cheese
1 package (7 oz) mozzarella cheese
1/4 cup Parmesan cheese
2 tbsp chopped Parsley
Lasagna Noodles, uncooked
Over medium heat, cook beef or turkey, drain fat. Stir in spaghetti sauce and water. Allow to simmer for about 10 minutes. In a bowl, mix together Ricotta cheese, 1 1/2 cups Mozzarella cheese, Parsley, egg, and Parmesan cheese. Spray the slow cooker with cooking spray or olive oil. Place one cup sauce on bottom of slow cooker. Follow with noodles (broken to fit across) and then cheese layer. Next, scoop two cups meat sauce on cheese layer. Top with more noodles, the remaining cheese layer, and remaining sauce. Cover and cook on low 4-6 hours. Sprinkle remaining mozzarella cheese on top and allow to melt. Serve!
