Roasted Broccoli

Being a mom of three kids, I try every different way to get my kids to eat their veggies. My oldest kid, almost six, is great about it. He pretty much eats whatever is on his plate. However, my four year old and two year old are SUPER picky. Honestly, most nights, those two look at their dinner and say “ewwww mama, I don’t like that” or “mama, I wanted macaroni and cheese” ha-ha ! A few nights ago, I added this “Roasted Broccoli” to our dinner meal and I was shocked to see all three kids eating it willingly. My two year old put his fork down and was popping broccoli pieces into his mouth as though it was candy! YEA! Needless to say, I will definitely be making this again. Nothing is better than watching your kids eat up all their veggies and ask for more!!



1-2 large bundles (florets) of broccoli, rinsed and cut into smaller pieces
Olive Oil
Kosher Salt/Pepper
Minced Garlic



Once the broccoli is cut and rinsed, place on a foil lined cookie sheet. Drizzle some olive oil lightly on top of broccoli and toss to coat thoroughly. Sprinkle with salt and minced garlic. Place cookie sheet in preheated oven (425) for about 20-25 minutes, or until crisp.
*Just eye-ball the amounts of the ingredients. If you like garlic, sprinkle generously. If you don’t, you can omit it!!
