Creamy Avocado, Basil, Lemon Pasta

Once a week I try to do a “meatless” dinner. A lot of people do “Meatless Monday”. I don’t follow a set day, but aim for at least once a week. It gives me an excuse to branch out and try totally new recipes. This yummy pasta took about 5 minutes to put together and was a hit with the family. My kids ate it up and thought it was pesto, little did they know it was avocado based, 🙂

Its always fun when I can make a healthy dish that my kids eat up and end up loving!! 
2 avocados, pitted
1 lemon, juiced
3 garlic cloves
1/2 cup fresh Basil
1/2 tsp salt
3 tbsp extra virgin olive oil
Ground Pepper (to taste)
12 oz pasta (any kind desired)
In a food processor, place the garlic cloves, olive oil, and lemon juice inside. Process until smooth. Add in avocado, basil, and salt. Process until smooth. Meanwhile, cook pasta according to directions. Once pasta is cooked and drained, add avocado mixture to it and toss to coat thoroughly. Sprinkle some pepper and Parmesan cheese (if desired) on top. Serve warm. 
*This recipe is one that you can tweak to your liking. If you want more avocado and less lemon, go for it. Have fun with it, you’ll love it!!
