Baked Chicken Chimichangas

As I have mentioned previously, my hubby and I love Mexican food. I have been trying to branch out more and try new varieties of it. A while back, I found a recipe that was similar to these. It called for olives and other ingredients, but since my hubby and I aren’t fans of half the ingredients it called for, I tweaked it to fit our likes!! These were so tasty! We put the leftovers in the freezer, and now pull them out for lunches or quick dinners during the week!!


8 oz package cream cheese
8 oz Pepper-jack cheese, shredded
1 1/2 tbsp Taco seasoning (or use one package store bought seasoning)
1 lb chicken, cooked and shredded
8-9 flour tortillas
Cooking Spray
Shredded Cheddar Cheese
Sour Cream/Salsa/Green Onion


Stir together cream cheese, Pepper-jack cheese, and taco seasoning. Fold in chicken. Divide mixture evenly between tortillas. Tuck in sides and roll up tortillas, closing them. Lay seam side down in a sprayed 9×13 baking dish. Spray cooking spray on top of tortillas. Bake at 350 for about 15 minutes, turn them over, and bake another 15 minutes. Once cooked, top with cheese, sour cream, salsa, green onions, and any other topping desired!
