Honey Sesame Chicken

If someone asked me what one thing in my kitchen I could not live without would be, I would most likely reply, “my slow cooker”. I am obsessed with it. In fact, I went out and bought another one so I now have two. Very rarely do I use two at the same time, but I wanted to make sure I had the option, should I ever need it, hehe!!! This honey sesame chicken was quite delicious and simple to throw together. Since my hubby does not like white or brown rice, I put it over fried rice. Yummy!!

1-2 lbs boneless, skinless chicken breasts
1/2 cup onion, chopped
3 cloves garlic, minced
1/2 cup honey
1/4 cup ketchup
1/4 cup soy sauce
2 tbsp vegetable oil
1/4 tsp red pepper flakes
4 tsp cornstarch
1/3 cup water
White, Brown, or Fried Rice, cooked
1/2 tbsp sesame seeds

Place chicken in slow cooker. Lightly sprinkle salt and pepper on top. In small bowl, mix onion, garlic, honey, ketchup, soy sauce, vegetable oil, and red pepper flakes. Mix well. Pour over chicken and cover. Cook on low 6-7 hours, high 3-4. Once cooked, shred chicken using a fork. In a small bowl, mix together cornstarch and water until combined, mix into slow cooker. Cook mixture on high for 10 minutes, or until sauce thickens. Serve chicken over rice. Sprinkle sesame seeds over chicken.
