Crunchy Black Bean Tacos

If you are looking for a tasty, meatless dinner, this is just the thing. It is super simple to make and full of flavor. I have always been one to include a meat item with each dinner, so I was a little unsure of these at first, but the hubby and I agreed, I will definitely be making them again. My kids aren’t big into eating tacos, so I made them something different, but these aren’t spicy, so if your kids aren’t picky, they would love these as well!!


1 can (15 oz) black beans, rinsed and drained
1/2 cup red or white onion, minced
1 tsp cumin
1 tsp paprika
1 tsp taco seasoning (optional)
2 tbsp cilantro, chopped
4 oz pepper jack cheese, grated
Cooking spray
Corn tortillas
Salsa/Sour Cream



In a medium bowl, mix together beans, onion, cumin, paprika, taco seasoning, and cilantro. Heat a large, non-stick skillet over medium-high heat. Spray with non stick cooking spray and place a corn tortilla on skillet. Scoop a little less than 1/4 cup of bean mixture on one side of taco, top with cheese. Using a spatula, fold tortilla in half and hold spatula there to mold shape. Cook on each side about 3 minutes, or until shell is crispy and golden brown. Serve with sour cream and salsa on top!!
