Cajun Potatoes

I live in east Houston, Texas only about 2 hours from Louisiana. Amanda one of my best friends is actually from Sulphur, La and she was the main one to introduce me to the seasonings and awesomeness of Cajun food. I still have a ton to learn from her, but I soak up whatever I can. This meal is pretty hearty and manly ha ha. I made it for lunch this week for my husband and he ate it right up. What man does not like meat and potatoes? I’m pretty sure his man card got upgraded to a platinum status for the day. However, you can eat this without a man card,because it’s good enough for the whole family! Best part it’s all cooked in one pan!

5 medium potatoes sliced thinly
1 lb of Andouille sausage diced
1/3 Cup of Olive oil
Cajun seasoning to taste
4 garlic cloves diced
1/2 a cup of green onions
1/4 a cup of cheese

Coat sliced potatoes with half the olive oil and seasoning. I used Tony Cachere’s original Cajun seasoning . Let it sit . In a pan place the rest of the olive oil and over medium high heat cook the sausage thoroughly. Once cooked, remove sausage. Add potatoes to the pan and sausage leftover tid bits. Once potatoes are browned and to desired texture add green onions and garlic. Cook for about 5 minutes. Add cheese. Enjoy!
