Sour Cream Noodle Bake

My family loves to eat pasta, especially the kids. If you were to ask my kids what they wanted for dinner each night, they would respond “pasta” or “macaroni and cheese”. I like changing things up a bit, but every now and then I give in and try new pasta dishes. This one was a hit and is a dish that I will definitely be making again. Its a perfect meal for giving to friends/family, in a hurry, large groups, etc. 


1 lb ground beef
1 (15 oz) can tomato sauce
1/2 tsp salt
Ground Pepper
8 oz. egg noodles
1/2 cup sour cream
1 1/4 cup small curd cottage cheese
1/2 cup sliced green onion
1 cup fresh grated cheddar cheese


Preheat oven to 350. Cook beef in a large pan. Drain fat and add in tomato sauce, salt, and pepper. Simmer while you mix other ingredients. Cook noodles until al dente, drain water. In medium bowl, combine sour cream and cottage cheese. Be sure to add in some ground pepper. Add noodles to the bowl and combine. Add in green onions and stir.
To assemble, add half the noodle mixture to a baking dish. Top with half the meat mixture, then sprinkle on half the cheddar cheese. Follow order by adding the last layer of noddles, then meat mixture, followed lastly by the remaining cheese.
Bake in preheated oven for 20-25 minutes, or until all cheese is melted and bubbly.
