Slow Cooker Garlic and Parmesan Chicken

I am in love with my slow cooker, seriously, its love!!! On days where both my kids have school, and my youngest and I are on the run with errands, I am left with no time to even think about dinner. Before we leave for school, I love being able to throw a meal in the slow cooker and when I finally come home, its done! This dinner was quite yummy. My husband isn’t a huge fan of rice, so he didn’t like that part, but he enjoyed the chicken. If you aren’t into rice, you could use pasta instead : )

Ingredients:

4 boneless skinless chicken breasts
1 tsp olive oil
4 tbsp white wine
1/4 tsp salt
5 garlic cloves, minced
1 tsp basil
1/2 tsp parsley
1/4 cup Parmesan cheese
1 cup brown rice, uncooked
1 1/4 cup chicken broth

Directions:

Lightly spray the bottom of your slow cooker with cooking spray. Place rice on bottom. Pour the chicken broth on top of the rice, coating it completely. In a small bowl, mix together the olive oil, wine, salt, garlic, basil, and parsley. Pour mixture on top of chicken. Cover and cook on low 6-8 hours. *I found that the rice was cooked in half that time, so I scooped it out earlier and put it in a Tupperware to save for dinner, you can leave it in there if you like rice a little mushier.
Once cooked, lightly shred chicken and place over rice. Sprinkle cheese on top and serve!!
