Crock Pot Whole Chicken

A few weeks ago, I found a recipe that called for putting a whole chicken in the crock pot. I feel in love with it. It was SO easy to do and the chicken was so moist at the end, literally falling off the bone! When I went to my grocery store a week later, my store was running an amazing sale on their chickens. I ended up getting 3 five pound chickens for only $6. Amazing right?? Needless to say, I had to try another version of the whole chicken in the crock pot. This one is a basic, but delicious recipe and we had enough leftovers to make shredded  chicken sandwiches for lunch the next day! Yum!

3 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1/2 tsp garlic powder
1/2 tsp black pepper
5-6 lb whole chicken
1 sliced up onion

In a small bowl, mix all spices together. Place sliced onion on bottom of slow cooker. Place chicken on top, breast side up. Sprinkle spices on top of chicken and rub to coat thoroughly. *There is no need to add liquid to the slow cooker as the chicken will release juices throughout the cooking cycle.
Place lid on and cook low 8 hours.
Once cooked, remove from slow cooker and slice up chicken. Scoop out some of the juices for additional flavor over chicken.
