Street Tacos- Tacos de Bistec

Growing up my mom and dad took us to Mexico every summer to visit family. No matter what time we arrived we always went straight to the taco stands. You could get an order of tacos , which I believe is 6 or 8, for like a buck. It’s been a while since I have been back , but I still enjoy eating street tacos in the comfort of my own home. Pop on some salsa music while you are cooking and enjoy a mini fiesta in your kitchen. I’m getting hungry just thinking about them. Well here is the recipe I use. Enjoy!

2 pounds thinly sliced Sirloin
12 corn tortillas ( I like the yellow corn tortillas)
1 tablespoon of vegetable oil
1 medium white onion finely chopped
1 bunch of cilantro finely chopped
Salt and pepper to season the meat
A salsa of your choice

Directions: In a non-stick skillet heat the vegetable oil. Sprinkle steaks with salt and pepper. I use sea salt because its more forgiving if you over do it.add the steaks to skillet. Brown the steaks. Cook for about 3 minutes per side. Remove steaks from skillet. Chop them up into tiny pieces. Return to skillet to brown a bit more, about 3 more minutes. Remove the meat. In the same skillet heat up your tortillas. You can heat them up separately if you prefer but at the taco stands they use the same grease. Remove tortillas. Place meat in each tortilla, top with cilantro and onions. Top with lemon juice and salsa.
