Bacon Parmesan Penne

Yesterday, I blogged a fun new way to cook bacon in your oven. I was so impressed with how easy it was, clean my kitchen stayed, etc. I don’t think I will ever cook bacon another way again!!! I had to make the bacon for this yummy new pasta dish I tried for dinner. It was a HUGE hit, especially with my kids. My five year old had three plate fulls of it and my four year old had two plates. If you know anything about my four year old, you know she is just about the pickiest eater ever!!! For her to even have a few bites of it,  meant she loved it and it would DEFINITELY be something I would be making again. Definitely try it, how can you go wrong with a pasta dish that involves 5 ingredients only right??


1 lb bacon, about 15 slices, cooked/chopped
1 onion, diced
1 lb penne pasta, about 5 cups
1/2 cup olive oil
1/2 cup Parmesan cheese


Place chopped onion and bacon into a skillet over medium high heat. Allow to simmer until onion is tender and slightly browned, about 10 minutes.
Meanwhile, fill a large pot with water and boil over medium high heat. Add in penne pasta and allow to cook until al dente, about 11 minutes. Drain water.
Add olive oil to pasta and toss to coat evenly.
Add bacon mixture to pasta. Add Parmesan cheese to pasta and mix well. Serve!
