Ainsley’s Tortilla Soup

My husband and I were blessed with not only two amazing little boys and a little girl on the way, but he also trusted us to help guide a lovely eighteen year old young lady for the past year.  Once in our home we learned that she is an awesome little cook herself and brought with her this recipe for Tortilla soup from home. We just eat it all up each time it’s made. It’s 100 times easier than previous recipes I have tried to make. It’s full of flavor and has a kick to it. I just made this tonight before my boys went out and they left with happy tummies. Hope you try it and like it!


3 boneless, chicken breasts
½ a large white onion diced
4 cloves of garlic chopped
4 Jalapenos De-seed and dice
 (Jalapeno hint- if the pepperhas red or yellow hints of color, and a good amount of veins it probably hassome good heat to it- if you want it more for flavor , less for heat search forthe plain green ones.)
1 (16 ounce) can of black beans
1 (15.25 ounce) can of whole kernel corn
1 tablespoon of cumin
2 chicken bouillon cubes (I use Knorr brand)
4 cups of chicken broth
4 cups of water
1 tablespoon of vegetable oil
1 zucchini sliced1 yellow squash sliced
1 avocado, pitted, sliced
1 cup shredded Monterrey cheese
1 lime
Tortilla chips
Sour cream
Salt and Pepper to taste


 Sauté the onion,jalapeno, and garlic in the bottom of the pot with the vegetable oil. Once the onion shave softened add the chicken broth, water, bouillon cubes, cumin beans and corn.Once at a boil add your chicken breast. Cook the chicken for 20 to 25 minutes.Once chicken is cooked remove from pot. Once the chicken has cooled you can shred it and it back to the pot. Add the Zucchini and Squash and cook for an additional 5 minutes. I like my vegetables to have a bit of a crunch to them. If you prefer the softer texture then leave them in a bit longer till you reach desired tenderness. Taste broth and add salt and pepper to taste. I have yet to find a time it needed more flavor. Place tortilla chips, avocado slices, cheese and sour cream in bowl and ladle soup over. Add lime if desired. Enjoy your yummy soup!!
