Cucumber Sandwiches

These yummy sandwiches are perfect for any event. They are quick to whip up, tasty, and a great appetizer. I have made them for baby showers, parties, and more. Everyone always seems to rant and rave over how yummy they are. Over the weekend, I hosted a Twilight movie party and made these sandwiches. They were definitely a hit, and took me less than 5 minutes to put together!!


1 loaf dill rye bread
2 cucumbers, peeled and sliced
1 8oz package cream cheese
1 packet Italian Dressing dry mix
Dill Seasoning (optional)


In a bowl, mix together cream cheese and Italian dressing mix. Set aside. Slice edges off of bread and cut into desired shape/size. I typically cut each slice of bread in half, getting two sandwiches per slice of bread. Spread a little of the cream cheese mixture on a slice of bread and place a cucumber slice on top. Sprinkle dill on top if you have it. Chill in refrigerator until serving.
