Chicken Noodle Casserole

This dinner is perfect for cold, rainy nights. Last night, was one of those. On top of it, I had parent teacher conferences and knew I wouldnt have time to put together dinner. I threw this meal together in about 10 minutes and when I came home, I popped it in the oven and dinner was served. It was definitely the perfect end to a crazy day!! The kids went nuts over it and we plan on having the leftovers tonight. That means it was good right, leftovers the next night? Hehe!! Enjoy!


1 onion, chopped
3 tbsp butter or margarine
2 (10 3/4 oz) can cream of chicken soup
2 cups shredded cheddar cheese
1 cup milk
3 1/2 cups cooked chicken, shredded or cubed
2 1/2 cups cooked macaroni pasta
1/4 cup crushed Ritz crackers


In a large skillet over medium high heat, saute onions in butter until onions are tender. Add in soups and 1 1/2 cups cheese. Gradually stir in milk. Cook until cheese is melted, stir in chicken and macaroni. Adjust taste with salt/pepper if desired. Transfer mixture to a lightly greased 9×13 baking dish. Top with crushed crackers crumbs. Bake in a preheated oven at 350 for 30 minutes. Sprinkle remainder cheese on top and put back into oven for an additional 5 minutes, or until cheese is melted. Serve!
