I don’t know about y’all but I LOVE my slow cooker, especially in the Fall with school back in session and the craziness that that entails. I love dumping ingredients in and having a full meal ready at dinnertime, and not having to work hard for it.
This recipe reminded me of a Teriyaki chicken crossed with a Hawaiian chicken. It was sweet, so my kids enjoyed as well.
4-6 chicken breasts (I used frozen, thawed works too)
1 cup brown sugar
2/3 cup white vinegar
1/4 cup lemon lime soda
2-3 tbsp minced garlic
2 tbsp soy sauce
1 tsp ground pepper
2 tbsp cornstarch
2 tbsp water
In a slow cooker, spray it or place liner inside. Place chicken on bottom. Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper in a bowl. Pour mixture over chicken. Place lid on slow cooker and cook on low 7-8 hours, high 4-5. Once chicken is done, remove chicken from slow cooker and place aside. Pour sauce into a saucepan. Cook over high heat on stove. Mix together cornstarch and water, pour into saucepan and mix well. Let sauce come to a boil for about 2-3 minutes. Remove from heat, sauce will thicken as it cools. Serve chicken over rice and top with glaze. (I shredded the chicken over the rice)
