Pumpkin Chocolate Chip Muffins

This morning, I am hosting a muffin swap. I had every intention of making a cinnamon sugar doughnut muffin for it, but when I read the recipe, it only made 9 muffins. Since I needed 12, I had to find another recipe. I came across this one and thought, pumpkin and chocolate chip?, the perfect combo for a Fall type muffin. These were so easy to whip up and the flavor is AMAZING!!! Its a little piece of Fall, all in a muffin!! Have I mentioned how much I LOVE the Fall season?? : )


3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned pumpkin
1/4 cup water
1 1/2 cups all purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cloves
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1/2 cup semisweet chocolate chips


Preheat oven to 400. Grease muffin tin or line with paper liners. Mix sugar, oil, and eggs in a bowl. Add in pumpkin and water. In separate bowl, mix together flour, baking powder, baking soda, cloves, cinnamon, salt, and nutmeg. Mix until combined. Add in chocolate chips. Fill muffin cups 2/3 full with batter. Bake in preheated oven for about 15-18 minutes.
