Fluffy Pancakes

Okay, so I really am not a huge breakfast food person. Eggs, omelets, pancakes, waffles, etc. dont do much for me. Crazy right? My husband and kids however, are HUGE breakfast food people. So, I compromise every now and then and have “breakfast dinners”. Its quick and always a big hit with the kids because its so rare to have breakfast for dinner haha!! Last night, we tried a new pancake recipe and they turned out great. We added in some fresh picked blueberries and lets just say, even I enjoyed them!! They are quite fluffy and “light” tasting, you could add in chocolate chips, blueberries, cinnamon, etc. Yum!!!


3/4 cup milk
2 tbsp white vinegar
1 cup all-purpose flour
2 tbsp white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 tbsp butter, melted
Cooking spray


Combine milk with vinegar in a medium bowl. Set aside for about 5 minutes to let the milk “sour”. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk in egg and melted butter into soured milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat a large skillet over medium heat and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on other side. Serve warm with butter and syrup, powdered sugar, fruit or topping of choice : )

We added in blueberries but these can be mixed with anything you desire, or plain
