Olive Oil, Garlic, Chives, and Cheese Mashed Potatoes

I don’t know about you, but my hubby and I LOVE us some potatoes. The name says it all right? It is making me want to run downstairs, open the container of leftovers, and dive into it right now. They are amazing, these potatoes fall into our top three potato dish that I make. You need to try these too, of course, only if you are potato fans, : )


2 lbs potatoes, scrubbed, peeled, and diced large
6 cups water (to boil the potatoes in)
1 tsp salt
5 garlic cloves, ends snipped and peeled
1/4 cup extra virgin olive oil
1/2 cup evaporated milk
1/3 cup Parmesan cheese
1 tsp black pepper
2 tbsp chopped chives
Salt (season to taste)


In a pot, put diced potatoes, peeled garlic cloves, and water and bring to a boil. Once the water is boiling, add in the 1 tsp salt and cook potatoes until tender.
Drain the water from the pot. While hot, mash the potatoes until desired consistency.
Add in the olive oil and evaporated milk. Stir until combined.
Add in the cheese and pepper, stir. Fold in chives at the end as well as any additional salt to taste. Serve hot!
