Oatmeal Cream Pies

Since my hubby and I have been married, he has asked me to make these cream pies. I never had the desire since I am a chocolate girl, and these are not chocolate. I had never even thought about making these from scratch, so I just kept him happy with the store bought kind. Finally, I decided that I needed to spoil him a bit and make him a batch. They were surprisingly easy to make and made quite a few cookie pies! When he came home to them, the look on his face said it all….he was SO excited and quickly gobbled a few up! I even got the “you are the best wife in the whole world” line, YEA! Points for me, : )



1 cup unsalted butter
3/4 cup dark brown sugar
1/2 cup sugar
1 tbsp molasses
1 tsp vanilla extract
2 eggs
1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
1/8 tsp cinnamon
1 1/2 cups quick oats


2 tsp very hot water
1/4 tsp salt
1 (7oz) jar marshmallow cream
1/2 cup shortening
1/3 cup powdered sugar
1/2 tsp vanilla extract


Preheat oven to 350 and line a cookie sheet with parchment paper. In the bowl of your stand mixer, mix together the butter, brown sugar, sugar, molasses, vanilla, and eggs until creamy. In a medium mixing bowl, combine the flour, salt, baking soda, and cinnamon. Slowly add the dry mixture to the stand mixing bowl. Once combined, add in quick oats. Drop tablespoon sized scoops onto the baking sheet and bake in the oven 8-10 minutes, do NOT over-bake, they will look moist. While the cookies are baking, dissolve the salt in the hot water and allow to cool until room temperature. Mix together the marshmallow cream, shortening, powdered sugar, and vanilla extract. Once combined, add in salt mixture.
After cookies are baked and cooled, spread cream on one cookie and top with another cookie creating a sandwich. My batch made about 19 cream pies!
