Chocolate Chip Cheesecake Bars

I decided to make this dessert for Fathers Day and it was delicious. Quite rich, so dont cut a huge piece, but this is mouth watering yummy!! It has all my favorites in one bar; cheesecake, oreo, and cookie dough!

1 1/2 cups Oreo cookie crumbs
5 tbsp butter, melted
Chocolate Chip Cookie Dough:
5 tbsp butter, room temperature
1/3 cup packed brown sugar
3 tbsp sugar
1/4 tsp salt
1 tsp vanilla extract
3/4 cup flour
2/3 cup chocolate chips
Cheesecake Filling:
10 oz cream cheese, room temperature
1/4 cup sugar
1 egg
1 tsp vanilla extract
1/2 cup melted chocolate (I used chocolate chips)
Preheat oven to 325. Grease the bottom of an 8×8 baking pan. Mix together melted butter and oreo crumbs. Press the mixture into bottom of prepared pan. Bake in oven 6 minutes. Remove pan to a cooling rack.
While crust is cooling, prepare cookie dough. In large bowl with electric mixer, beat butter, brown sugar, sugar, salt, and vanilla until smooth. Mix in flour on low speed and mix until incorporated. Mix in chocolate chips, set aside.
In a bowl beat together cream cheese and sugar until smooth. Mix in egg and vanilla until combined. Add 1/2 cup melted chocolate. Pour cheesecake batter into the prepared crust.
Flatten the clumps of cookie dough in your hand and distribute dough onto the top of the cheesecake batter. Be sure to use all the dough, you will cover most of the cheesecake.
Bake for about 30-32 minutes, until top feels dry and firm and pan looks set. Move pan to cooling rack until completely cool. Move to fridge to chill.
Cut into bars and serve!
