Chicken Tostadas with Fresh Guacamole

This dinner is my hubby’s favorite dinner I make. As he said last night, “I could eat this several times a week its so good”. Everything is so simple, yet the flavor is amazing!!

I make the guacamole from scratch, if you prefer eliminating a step, you can very easily buy some from the grocery store and it would still be amazing!!



2 avocados, pit removed
1/2 red onion, chopped
1 clove garlic, chopped
1 jalapeno, chopped
1 tomato, chopped
salt (i use kosher, and lots of it)


Add all the ingredients into a mixing bowl and mash up. Some use a fork, others use a potato masher. I actually prefer using a food processor, but since I like mine chunky, I only mix it up a few times!! Add the salt depending on what flavor you are going for, some like lots, others prefer more natural tasting. Either way, thats it…no seeding tomatoes, etc. Super yummy!!

Chicken Tostadas


tostada shells
1 pound chicken breast (frozen or thawed does not matter)
1 jar chipotle salsa
Guacamole (see recipe above or store buy)
1 onion, sliced
Extra Virgin Olive Oil
Cheddar Cheese, Sour cream, extra salsa for garnish


In a slow cooker, add the chicken and salsa. Cook on low 7-8 hours, or high 4-5.

Once chicken is cooked, shred it with a fork. 

In a skillet, add some olive oil and your onion, and cook until onion is golden color. Add salt/pepper to taste.

Take your tostada shell and top it with your chicken, cooked onion, cheese, guacamole, sour cream, and salsa. Thats it, its ready to be devoured!! Some just pick their tostadas up to eat them, others use a fork…..enjoy!!

    Hot as in spicy? Nope, not at all. My kids love eating this with us!

    Hot as in temperature, we like to serve our warm the day we make it, but then we typically dont warm it up for leftovers since its good cold too, 🙂
