Slow Cooker Chicken Parmesan Soup

A favorite dinner to me, is one that I can throw into the slow cooker, not worry about all day, and enjoy in the evening!! This definitely fits that description!! Not only was this simple to make, but the family all loved this!! We were able to enjoy it again the next day for lunches!! 


  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup marinara sauce
  • 2 chicken breasts
  • 3 cups chicken broth
  • 1 onion, chopped
  • 1/2 cup Parmesan cheese, chopped
  • 1 tbsp chopped Basil, use fresh if possible
  • 2 tbsp chopped Oregano
  • 1/4 tsp red pepper flakes
  • 6 oz penne pasta
  • Chopped Basil/Parmesan Cheese for garnish
  1. In the slow cooker, combine the garlic, green pepper, crushed tomatoes, marinara sauce, chicken, chicken broth, Parmesan cheese, Basil, oregano, and red pepper flakes.
  2. Allow to cook on low for about 7 hours, or high for about 3-4 hours.
  3. Shred chicken using two forks.
  4. About 30 minutes before meal is done, add in the uncooked pasta into the slow cooker.
  5. Once tender, about 30 minutes later, the soup is ready to serve!
  6. Add extra basil and cheese for additional flavor!!
