Over the past few months, my husband and I have been getting into trying out panini recipes. I scored an amazing deal on a panini press a while back, so we love putting it to good use!! My husband is a huge roast beef fan, so a lot of our panini’s use that! I love how many different varieties one can come up with and I love how simple it is to throw together. Even my kids love paninis, which is great for those nights I do not feel like cooking, and decide to call it dinner, : )
2 red onions, sliced
5 tbsp olive oil
1/4 cup balsamic vinegar
1 cup mayonnaise
1/4 cup chopped fresh basil
1 1/2 tbsp lemon juice2 tsp grated lemon peel
2 tbsp olive oil
6 Ciabatta rolls or Foccacia rolls
1 lb roast beef, thinly sliced
Provolone cheese, sliced
Preheat oven to 425. Line a baking sheet with tin foil. Gently toss the red onion with the olive oil and balsamic vinegar. Sprinkle with some salt and pepper. Arrange onions in a single layer on sheet. Bake in oven until slightly brown and tender, about 40 minutes. Set aside.
Mix the mayonnaise, basil, lemon juice, lemon peel, and 2 tbsp olive oil in a bowl. Spread mayonnaise onto one half of the bread. Top with roast beef, onions, and one slice of cheese. Cover bread with another slice creating a sandwich.
Place on panini press until cheese is melted and bread is toasted. *You can also use a skillet or griddle
