Balsamic Glazed Salmon

Since my family and I live in Seattle, WA, we love enjoying the fresh salmon. We almost always have some in our freezer. My kids love it too, so it is fun to create new varieties of the fish! Last night, we made this glaze to go over it and it was amazing. It had so much flavor and the slightly tart/slightly sweet glaze really enhanced the overall flavor of the fish!!!

1/2 cup balsamic vinegar
1/4 cup white wine
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp rosemary, chopped
2 garlic cloves, minced
4 salmon fillets (6 oz each)

In a saucepan, combine the balsamic vinegar, wine, honey, mustard, rosemary, and garlic. Heat over medium high until boiling. Reduce heat to low and allow to simmer until sauce thickens, about 15 minutes. Remove from heat and set aside to cool a bit.
Cook salmon fillets on grill or in oven. Once cooked through, pour glaze over top of fish and serve! Chop up additional rosemary and sprinkle on top for additional flavor!!
