Last weekend, I was in the mood to make a new muffin recipe, but also realized I had a TON of oatmeal on hand to use up. I decided to combine the two and try these Baked Oatmeal Muffins out. They were packed with flavor, simple to make, and healthy. The leftover muffins went into my freezer to take out on mornings where we are pressed for time. These are a great breakfast on the go and are packed with protein to last you all morning!!!
2 1/2 cups old fashioned rolled oats
1 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
2 tbsp butter, melted
2 cups milk
1/4 cup maple syrup
1 1/2 cups blueberries or other fruit of your choice (apples, pears, etc)
In a bowl, combine the oats, baking powder, salt, and cinnamon. In a separate bowl, combine the butter, milk, egg, and syrup. Carefully add the wet ingredients into the dry and stir until combined. The mixture will be very loose, that is okay. Gently fold in the blueberries or fruit of your choice. Line a muffin tray with liners and pour mixture into each cup evenly. This should make about 12-14 muffins. Place muffin tray into a preheated oven, 375, and bake for about 30 minutes, or until slightly golden brown. Remove from oven and allow to cool slightly before enjoying!!
