Last week, my husband had to travel down to Kentucky for a business trip. I was trying to keep the meals I made extremely kid friendly while he was gone. One of the nights, I quickly threw this together and it was a hit. The kids ate it up and it was on the table in under ten minutes. Impressive, right? This is a very simple, quick dinner, so it would be perfect to keep the ingredients on hand for those crazy nights, where time seems to be slipping away, : )
1 package (19 oz) tortellini (I used cheese)
3 garlic cloves, minced
2 cups red sauce (any flavor desired)
3/4 cup whipping cream
1/4 cup Parmesan cheese, shredded
Cook tortellini as directed on package. Drain. Set aside. Meanwhile, in a pan, warm the red sauce with garlic. Allow to simmer about 2-3 minutes, on medium high heat. Slowly add in the whipping cream. Once heated through, remove from heat and mix into the cooked tortellini. Sprinkle the Parmesan cheese on top and serve.
