Whole Wheat Blueberry Pancakes

I am a huge fan of easy dinners! Especially ones that I do not have to give any thought to until actual dinnertime. I made these pancakes for my family a few nights ago and everyone gobbled them up quickly. My kids definitely take after their daddy and love their breakfast food! Whether you make these in the morning, lunchtime, or for a breakfast dinner, hopefully you will love them just as much as we did, : )


1 cup milk
2 eggs
3 tbsp vegetable oil
1 1/2 cups whole wheat pastry flour (all purpose works too)
1 tbsp sugar
2 tsp baking powder
1 tsp vanilla extract
1 tsp salt
1 cup blueberries, coated in flour


Whisk all pancake ingredients together in bowl, excluding blueberries. In a small bowl, toss blueberries with about 1/4 cup flour and toss until coated evenly. Remove excess flour from bowl and gently fold them into pancake batter. Once combined, pour about 1/3 cup batter onto a hot griddle/non-stick pan and wait until the top bubbles before flipping to the other side. Serve with butter, syrup, powdered sugar, or desired topping!
