Blueberry Oatmeal Muffins

This week, I have my in-laws coming into town. I wanted to make a few things over the weekend, so I could have them in my freezer for the visit. It is always easier cooking/baking ahead, so I can just pull out the goodies as we go! I wanted to try a new muffin and decided to go for a healthier version of our blueberry muffins! These were a huge hit and barely made it into my freezer since my hubby and kids all wanted to keep eating them, hehe!!!

1 cup whole wheat flour
1/3 Splenda Brown Sugar Substitute
3 tsp baking powder
1/2 tsp ground cinnamon
1 cup old fashioned oats
1/2 cup egg whites
1/3 cup canola oil
1/3 cup milk
1 tsp vanilla extract
1 cup blueberries
In a medium bowl, mix together the first five ingredients. Once combined, slowly add in the egg whites, oil, milk, and vanilla. Fold in blueberries, be careful not to over-mix the blueberries unless you want purple colored muffins, hehe. Pour batter 2/3 high into lined muffin cups. Place tray into a preheated oven, 400, and bake for 18-20 minutes.
